Eddy Merckx dominated the spring classics with a 52x13 big gear and you're not Eddy. OTOH, you might like one tooth jumps through the 19 cog and a 26 ending cog or one tooth jumps through the 17 and a 29 big cog.
See my post above about the Shiftmate. You CAN use a Shimano cassette/wheelset with Campy shifters/derailleurs with the Shiftmate.
As you point out, there are other advantages to going all Campy, but if the OP wants to keep the budget reasonable this is one place to do it.
