Geared to Single Speed and Back Again

Let me first say that I am no mechanic. But I have certainly built up and tore down multiple bikes.

I have a SSCX series that I'll be doing this Fall and I'm going to use my all-around bike as the go-to. This particular bike has internally-routed cables, and as I said, I'm no mechanic, but it took me almost 40 minutes of cursing and flipping out to put a cable through a hole.

What do you folks think is the most practical and speedy solution for running this SSCX series and then easily putting back on the rear mech after the race? If it's going to take me 90 minutes to get the bike dialed in for just a simple road ride the next morning, this SS series is going to be a drag. As it is set up currently, there is no front derailleur and only a single ring. I have an ENO wheel. I'm looking to just take off the rear mech, swap wheels, swap chains. But I'm also trying to find the line where making it a geared bike again is as hassle-free as possible.

I saw a guy that had his rear mech cable hanging out without housing, covered in wax, and taped to the lower seat-stay. That's pretty gangster but probably fairly effective.

There was also a girl I met who rode in 39 x 20 and kept her bike like that all Fall as her coach told her it would teach her to "seek cadence." Sounded whack to me but I just nodded.
