As far as your unlimited data plan, I'm with AT&T and they've kept my unlimited data plan grandfathered in over a number of phone upgrades even though they no longer offer an unlimited plan.
w/ verizon you can keep your unlimited data but you need to buy your own phone, no subsidy. But, no contract either, just continue on month-to-month. If the phone costs you an extra $400-$600, I guess you would be unlikely to use that much in unlimited data over the life of the contract you would need to sign to get a subsidized phone.
