I got a Gunnar Rock Tour (Custom made but you can buy frame or frame with tour setup through QBP -- your LBS will help with this). I'd actually suggest against a road bike and gear towards a bike designed for rougher roads (LHT/Rock Tour). I've actually used this bike on back roads in Ontario (crappy gravel to mud to single-barely noticeable track) and it's been great (over 4,000KM in 2 months of riding).
One of the things that I like for this is the use of 26" tires, which provide for better grip on the more challenging roads. Right now my setup is strictly a rear rack but I will, when I get to the point of a trip long enough (that is, over 1,500KM and entirely camping/cooking outside), get the front racks and panniers.
