Yup install a set of drop bars for stoker (make sure they are wide enough so your quads clear the drops).
If she likes them, you can then install a pair of stoker hand rests too.
If she does not like the drop bars, you can cut off the drop section, flip the bars over and she'll have a pair of bullhorns
