Honey bees and wasps are very different (yellow jackets are wasps) Honeybees can only sting once and they die, leave the stinger. wasps do not die or loose their stingers so they will keep at it. Honey bees are pretty mellow away from the hive so unless you really piss them off they'd rather just fly away.

This is very true. I noticed that bee and yellow jacket seemed to be interchangeably, but they are completely different.
I can't ever recall being stung while riding my bike and I've put in more than a few miles! I have, inadvertently, eaten a few bugs. They always taste bad!
