upgrading 87 expert centurion to campagnolo 10 speed, need lots of help

As per my conversations with other members and my desire to switch out wheels i have decided to go ahead and start piecing together my conversion to centaur 10 speed. yesterday i bought a front derailleur and now its time to start looking for the rest of the parts. im very new to bikes in general, not afraid to wrench but my knowledge is very limited specially when it comes to campy. looking at rear derailleurs what is the difference between using the short cage, medium or long cage? also i was thinking i would be able to use my 105 calipers, bb and crankset, just change out rings? if im wrong please correct me. I did ask resident centurion expert robbietunes but i also dont want to continue to bug him with every little detail, he has been very helpful to this point.
