In addition to the Trek 520 and 720, mid-80s Schwinn Voyageurs are nice and came with 40 spoke rear wheel, which is nice for us bigger guys. In the 80s, Miyata made 3 touring units: 210, 610, and 1000. I have a Miyata touring frame that I rode for a short period and liked it... just a bit too small for me.
