I think at your "life experience" you know what you can or want to afford. 105, Ultegra, they both work fine. Fit, contact points (saddle/shorts, bars/gloves, pedals/shoes), tires, they make the most difference on a bike.
If the bike fits then you'll be fine. Lemond frames tend to favor people with long quads - that's how Lemond was built. The frames tended to have a shallower seat tube angle, longer top tube, but I don't know the whole line so I don't know about the later models.
Get a bike and enjoy the riding.
