I have (of course, right?)

.
I do 2 different types of fasted rides. First of all, I have to have a big, black tea before I ride. It's a weakness. Some go for coffee. As long as you're not taking in calories, it's no big deal. Keep in mind you only have a certain number of calories that are easy to access when riding fasted.
One type of fasted workout is WRI's. They suck fasted just like they suck when you're fed. Enthalpic has linked to some papers that have shown some hormonal advantages to doing these types of workouts fasted, so I've incorporated them on some Sunday mornings. These are high intensity, but they don't actually burn that much total energy. It's probably not what you're looking for.
The second type of fasted ride I do is a tempo-up to SST ride. I take food with me and eat (I'm partial to PB&J's) when I'm about 1-to-1 1/2 hours in. These burn quite a few calories and can make for some nice morning rides.
I also do take some BCAA's prior to one of these rides. They don't really add calories and reduce the tendency of your body to cannibalize your muscle when searching for fuel.
I don't think every ride should be a fasted ride, but I can certainly see the advantage of throwing one in once a week.
