Don't know about 41, but most of the time when there's a nearby parallel interstate (like I-75), the old road traffic is pretty light.
27 is mostly wide and lightly trafficed. The exception is the 15 miles or so from Cedartown up past Rome, where it's a mess of high-speed, heavy traffic rushing to and from I-75. It's a zoo again from Fort Oglethorpe into Chattanooga. (Of course, 41 through East Ridge matches the "zoo-ness".)
193 from Lafayette up through Flintstone is pretty nice, as long as you avoid school and rush hour traffic.
