Looking for a three day round trip tour in the El Paso area around Thanksgiving

I will be in El Paso for Thanksgiving weekend, and am considering arriving early and spending Monday-Wednesday on a round trip bicycle tour. I have the Southern Tier maps but all they suggest to me is an out and back, which is less than inspiring. For anyone familiar with the area, can you suggest a round trip route? Thinking about 50-60 miles per day.
