When overhauling traditional bearings, inspect the bearing races once you've cleaned all the grease off. Any pitting means the bearing's starting to go. It will still function, but will get rougher and rougher until the case hardening's gone. Something like a cone on a hub can be replaced, but permanent parts like cups in a hub can't.
