I see rabbits, squirrels, birds(usually crows), opossum, and deer all the time on my rural bike route. One day last summer when I was riding along the secluded bike path I made a point to count the rabbits I spooked, and exceeded 30 within a 10 mile stretch. Ironically this was the same day I had a buck run maybe 3 feet in front of me, before that day the only deer I had ever seen on my rides was a stray doe every now and then.
