I'm using a 100mm stem now, but could do with maybe 110. I just thought that with the bigger frame, my saddle could be neutral, and I could have a taller head tube with less spacers.

Have mailed Pinarello and they have confirmed that he is a genuine dealer. In Germany so unlikey to sell fakes I think.
Your number of spacers is quite conservative in my opinion and gives you room to add or subtract. Going lower could box you into a corner, but probably not. You don't want to have to go lower than a 100 mm stem in my opinion. You will get better bike control with a longer stem. I think I would go with the smaller bike and a 110 stem. The added length will add some to the height. You won't likely need more than one more spacer. That is just 25 mm or 1 inch altogether. All my bikes are set up with at least that much. Some folks don't like this, but it doesn't bother me. And BTW you know you can reduce the apparent number of spacers by substituting a higher profile top member on the headset such as a domed version.
