Fresh grease in all the bearing surfaces, new tires & tubes, cables & brake pads for sure to be ridden safely.
If the wheels hold a true leave them be after overhaul. FW & chain will need service and/or replacement but I'd leave all the original accessories in place and give the Brooks a chance w/ Proofide.

That was how it was ridden for good reason in "the day", a dynamo & mudguards make just as much sense now since it seems to get dark and precipitate still. The old girl would be in a shocking sate of un-dress w/o them. I'd try to save them.
