Kinda wasteful, but a friend of mine used to put masking tape on the collar to prevent the ring from forming, though this was not for riding.

Personally, I change shirts at work and wear whatever pants I'm going to wear that day. I wear a wicking layer plus a very light fleece (sometimes marketed as mid-layer) or thin soft shell typically.
