I sorted tried this - having a CX bike for my only ride, but I like bicycles and tinkering with them too much to settle on just one. Buy used fix it up some more projects... But a CX isn't a bad choice for one bike, of course it depends what your needs are. For many, more of a touring bike with cantis would be more versatile for, well, touring and also commuting.
