Ditto on the CO2. As far as the layers, I learned a long time ago that it's better to be overdressed because you can always take something off. I used to stuff newspapers under my jacket until once on a group ride I started chucking them into the woods and everyone got bent out of shape calling me a litterbug. I hate being cold.
