Its the springs in the rachet. I have a friend who is a mechanic and he showed this to me. It started to happen on my Shimano XT hub. Some hubs are worse than others.

I know what you mean about it being disconcerting. I thought my chain broke the first time as there was no cassette noise from a skipping chain.
