I use both Speedplay Zero and Shimano SPD (M770 XT) pedals and I would recommend SPD pedals for you. You are correct that Speedplay pedals require some maintenance like re-greasing them every few thousand miles.

There is essentially no performance advantage between road and mtn. bike shoes/pedals and you will be able to walk around a lot easier on some nice Mtn. Bike shoes. This will not be the case on road shoes.
