^^^ Wool works great for me. I like to shop at the local goodwill/ thrift for used sweaters. Wool socks are hard to beat for warmth. I put wool in my washer on cold. You don't kill the sheep, they just get a hair cut. Does not retain odors.
My warmer weather hybrid has LX STI shifters which are just beautiful until it gets really cold, my mountain bike is the same... the extrabike has friction thumbies for the coldest weather and the folder with it's 3 speed is just delightful in extreme cold as it also has the benefit of a hub that is trouble free.
I can expect that a lot of my riding will be done at around -18C / 0 F with lots of snow and ice... my gear reflects that.
