Great Divide is my big one. I would love to ride from Canada to Mexico along the West Coast, or even just top of California to the bottom.
Not the best for a bucket list as it is fairly easy to accomplish, but Moab is another place I would like to spend a few days. As well as Mammoth Mountain CA, Bend OR, Sedona AZ. Oh! And Haleakalā, if I can ever afford to go to Hawaii.
