Here's my 2 cents: 1st generation Campy Rallys should be avoided. 2nd generation Rallys do shift better but are not great. The Huret or Sachs-Huret Eco Duopar RD is the best shifting vintage RD I've ever used.
My experience with the gearing I need to haul my big body up these NH hills and mountains are primarily on 4 vintage bikes, all Schwinns, '66 Paramount, '72 Super Sport, '79 Traveler, and '83 Paramount. I have converted all from doubles to triples and with wide ranging freewheels and touring derailleurs. In the case of the '83 Paramount I used modern equipment and brifters.
I'm especially happy with how the Super Sport turned out using the Eco Duopar RD and an Nuovo Record FD.....

I understand that you might be able to, help me with a custom freewheel.
I am doing an L'Eroica build and want to have gearing which will be sensible for the inclines and gravel roads.
I have a Stronglight 49D crank, NR FD and a Duopar RD so I should be able to use a fairly wide range of gears on a 6 speed FW.
My thought is 36/46 up front and the following at the rear: 14, 16, 18, 21, 25, 32.
