Couldn't tell you what "they" are using. Just checking my tandem, looks like it's a 52/11? So at 40 mph in high gear, that works out to 106 rpm on the pedals. But like I said, this is Texas, so it's not like you're holding that speed for 10 minutes, more like 10 seconds as you bottom out.
