Yeah, charts don't tell you everything...
When I'm using my triple, I spend most of my time in the middle ring. I'll shift to the small ring when climbing, and big ring when I'm riding fast.
I find the triple is a little fussier than a double. My bike uses barcon shifters, so it's easy to tweak the FD a little bit. I suspect indexed front brifters would not wind up being able to use the full range of the cassette when in the middle ring.
IMO the only real advantage of a triple these days is if you need a wider gear range than a compact double. Since you can get a fairly wide and granular CD these days (e.g. 50-34 + 10sp 12-30), that advantage is narrower than ever.
