Bikes: Fuji Absolute 3.0

Seeking advice for a touring-interested clyde

I have a few questions that touch on a few different forums but felt that this would be the most appropriate place to post. I am a 280 pound Clydesdale rider that is interested in (possibly) purchasing a new bicycle. My current bicycle is a 2012 Fuji Absolute 3.0 aluminum hybrid with flat bars. I would like the ability to do S24Os, brevets, extended touring, and handle cargo around town. The only problem is that I'd like something that could be a little sporty when I am (hopefully) hovering under 200 pounds.

I was thinking that maybe I could purchase a Surly Long Haul Trucker frame plus fork and then migrate as many components as possible from my hybrid and use that as my primary bicycle. When I weigh less and am more fit I could either trade or sell the LHT for a Surly Crosscheck. Saving up for a custom frame is also a long term option.

TL;DR version: 280 lb. Clydesdale wants to tour and carry cargo but also wants a sporty ride when he weighs less.

edit: I really dislike the aesthetics of disc brakes and don't mind rim brakes at all. I live in a climate that doesn't get much rain.
