Shimano still makes standard brake levers for most, if not all, their groupsets and have a more up to date hood shape for hand comfort. Examples here.

To know what size you need for brake reach you measure the effective length from the center of the brake mount bolt to where the brake pads contact the rim or just use your current brakes for reference.
