Builder said next thing to try was brake booster, as I was flexing the front fork.

With disk, 2 fingers will stop me, as opposed to death grip.
Admittedly, I'm 20lbs lighter now, bike and pack are probably another 10...

The difference is night and day.
I've ridden some bikes equipped with bad brakes in the past that have required a death grip but the problem has always been with the brake itself and not the type of brake. I have a touring bike that comes close to your gross vehicle weight and I've never had a problem doing a 2 finger (again, the little and ring finger) stop at all kinds of speeds and conditions. That includes 50 mph rainy downhills.
