I have some Velo-Orange aluminum fenders that I like. I still found them fiddly to set up, but I do think they are more stable than the plastic (SKS, maybe?) fenders I replaced. One thing I wish I'd done was get them bigger than I needed them. My tires have gotten fatter and fatter as the years have gone by, and now my fenders have less clearance and take less jostling before they rub against the tire. Also on rough road, they rattle. There are things to be done to lessen the rattle, but some parts of the attachment system are loose by design, so I don't know if you can ever eliminate the gravel road rattle.
