Basically, your mistake was taking a well respected cog, the EAI and compared it to a known lesser cog, the Surly, and made comparisons that actually don't amount to much. The beefier nature of the Surly doesn't really matter because it's the teeth that count and provided you're buying the right sized cog for the right sized chain (ie, not a 3/32 cog for a 1/8 chain), the teeth are going to be the same thickness. The body of the cog can be anything I guess but to me, the 'lightening holes' are only there to hide the fact that Surly have made their cogs out of plate stock that's thicker than it needs to be. I've also spent most of my life playing with lightening stuff and while drilling lots of holes looks impressive, it doesn't achieve much in the real world.
