It seems the limiting factor is that Pashley doesn't offer many options. Do you need to get the wheel from them?
S3X is a lot of fun, I ride hundreds of miles on mine each year, but I don't think I'd want to tour with it. The hybrid gear is not an option on an S3X; it has an unusual driver that will take only one cog. The hybrid option assumes an old AW or similar.
But wait. Go back a step and figure out what kind of handlebar you want. Fit and position are among the most important factors that effect how much you will like a bike. If you can't get comfortable on a bike, you won't like it. The handlebar on that Pashley Countryman is, in my opinion, terrible. It offers only one hand position, and it's a bad one. Why such a bad handlebar? Because Shimano doesn't make a different shifter for the hub they're using.
I'm not saying gearing isn't important; but it has to come behind comfort. Get comfortable on your bike, and then see what kind of shifters you can put on it. There are, actually, two different aftermarket options that let you shift the Shimano 8 speed hub from a drop bar.
