Anything less than say 30 miles I don't worry about it.
For longer distances I don't eat anything greasy with the exception of a traditional breakfast. I will nibble on bananas, granola bars or something simple like that before a ride if I am empty. On some of my training rides I will stop at a local country cafe for a meal, nothing to heavy.

Barbecue or a steak is always a great way to finish off a long ride.
