The Miyata 1000 is no doubt a fine vintage touring bike, but I really can't see ~$700 for a used touring bike. Let's face it, there is definitely a lot of hype around this model, no doubt due to Sheldon Brown's endorsement. For quite a bit less you can pick up another of the vintage tourers, a nice donor mountain bike, and any other bits you want and have essentially the same bike. You could even get a new Motobecane Gran Turismo with a modern 9 speed drivetrain (XT, Dura ace, sora, Sugino mix) for less. Call me crazy, but I just can't see it.
