Basically, I'm considering either wide (~23mm) clinchers or potentially looking at switching to tubulars if there really is a compelling argument for them.

In my experience wider rims do make a difference. Most of that is probably because it allows you to lower the PSI a little in the tires making for a more comfortable ride. Lower rolling resistance is also a plus. There might be an aerodynamic difference but it will be minimal if you aren't looking at deeper rims.

You mention you are looking at super light carbon clinchers. Super light ones are probably won't be very deep (maybe 32mm) so there may not be that much of an aero benefit from them. The main benefit would be weight, and possibly that they look really cool.

I only have used wide aluminum clinchers. I have HED ardennes and a handbuilt wheelset with Pacenti SL23's. These have 23-24mm wide rims. I love the way they ride, and will keep buying wide rims.

If you can afford them a spare set of wheels isn't the worst thing to have around. Ive had times when I am ready to ride only to notice one tire is flat, I quickly throw on a spare wheel and go ride and deal with the flat later. Or if one wheelset needs to be serviced or it just needs to be trued I can ride my other set.
