You can tour successfully on just about any bicycle. Ideally one having a longish chain stay so that your panniers ( bags ) are out of the way of your feet. A bike that fits you is important. For panniers, you can pay lots of money for a set of Ortlieb OrtliebUSA or make your own from plastic buckets ( been done many times before ) IMO the best advice one can give is just pick a date and a rough destination and leave.
