I'd stick with 26" wheels. Not only will you'll be able to use the canti studs, but you'll be less high up when riding as well. I've done a similar conversion, and found the resulting height of the BB very uncomfortable in urban areas. Every time I needed to stop, I sort of had to fall sideways, back down to earth.
