Wheels Manufacturing used to make a spacer set (the blue one) to convert a Campy 9-speed cassette to 8. The 9-speed cassettes are much more readily available than the 8s. I use one of these on my favorite bike with a 14-28 Veloce 9 loose cogset that's made for juvenile racing. Just leave out whichever cog you don't want to use. The 14t cog will get you a more sensible high gear too.
