Stripped threads should not make your chain fall off. Is it the threads on the hub holding the cog on? Or the threads on the axle holding the wheel in place?

Regarless of that, the fixed cog just unscrews counterclockwise like you've been trying - no special tricks there, but they can be on pretty good and maybe corroded. Are you sure the other side of your hub is for fixed as well?
