The thing is I'm not very clever with looking at a schematic and visualising how the bike will fit and I really only discovered my current problem after riding beyond 100km. I guess that is what makes me reliant on a fitter's advice, but just based on chatting before I pay for a fit, every fitter seems to tell me different things!

Yeah, none of this is an exact science and a lot depends upon the individual philosophy of the fitter. You might consider just getting the frame from the Seven dealer and have the person you are most comfortable with do the rest. They should get you up on a trainer and watch you for a long time while they made adjustments. It take s awhile and you probably will need some adjustments a few months later after you get more comfortable.
