Beautiful bike! I think you are getting the sharp bend in the RD housing because you have too much housing length there. If you remove a couple inches from that housing you will get a much smoother bend. The extra housing is not really helping any. Also you might want to look for some of the coiled metal housing usually used with Campy RDs. Like this:
