Just repurposing the vintage parts that came with the bike work great, except for the rear hub.

The Belleri stems and bars are fine if not bent, the MAFAC brakes work great with new Koolstop pads and .

My advice is to have one of the local FG/SS specialists in your 'hood (and there are a few in Amsterdam) spoke a modern, but vintage looking track hub in the old wheels, if they still look nice. You can also buy a prebuild set that has a great vintage look.
