One last question guys. I may be able to get a triple, somewhere along the lines of 52/39/30. Would you guys still recommend an 11/28 or 12/27-30 cassette for the triple?

The 30-30 ratio is plenty for most paved hills unless you do mountain touring. And with a 52 big you won't miss the 11t. Even the 12t would be "scary fast descent only" together with the big ring.
