I'm 6'-0" and ride a 58cm Caad8, but then I have longer legs and a shorter torso than a friend of mine who is the same height, with shorter legs and longer torso - he rides a 54cm. 56cm seems like right in the middle and should work just fine with bike fit adjustments as required.
