Home recording is great for "one guy and a bunch of synthesizers", but once you start adding instruments that can't just be plugged into the board, things get harder. You need high quality microphones, a good room and a lot of expertise. That's why pro recording studios are still in business.
Garage Band would be more than adequate for the kind of stuff I would be recording, trust me. I'm not adding horn sections, it would be vocals, electric and acoustic guitar, bass, drums. That doesn't require special microphone mojo etc. Recording live drums properly would be the biggest challenge. But forget it, I'd never do it. I can go into a local cheap studio for like $25/hour, those guys aren't as good as the studios up here that charge 2-4x that, but they're good enough for my needs.
