Garage Band would be more than adequate for the kind of stuff I would be recording, trust me. I'm not adding horn sections, it would be vocals, electric and acoustic guitar, bass, drums. That doesn't require special microphone mojo etc. Recording live drums properly would be the biggest challenge. But forget it, I'd never do it. I can go into a local cheap studio for like $25/hour, those guys aren't as good as the studios up here that charge 2-4x that, but they're good enough for my needs.
If you've got a good room and a tight band without "that guy" who constantly needs to turn up his amp (usually a bass player), there's a lot you can do with two nice condensers and a couple of overdubs. Otherwise, the minute you mention drums you're talking about four mics as table stakes.
