An intriguing idea. With slopes, curves, and whatnot, it could be fun. My guess is that visibility could be an issue as it would be hard to resist the temptation to blast through the squirrliest parts at high speed so the paths would have to be wide enough to clear the slow pokes.

I doubt people could resist the urge to race. You can be certain that some idiot would mark the sections as unsafe on Strava...
