I'll agree that the classic cup/cone/loose balled headset will feel a bit more direct in the adjusting process. But not by much. Any offness of the frame/fork seats will be worse a situation then the bearing differences, IME. The better sealing of the cartridge design will likely last longer between servicings. Just make sure you can get replacement cartridges, like get a spare set now. Andy.
