Hyalite canyon is great. Also checkout the roads up to Bridger Bowl. Jackson creek road starting at the Grizzly Bear encounter, make a right Bridger Canyon Road m. Nice climb, but nothing too crazy. Beautiful Rural scenery and a nice coast back into town for a beer. If you go at the right time of year (August) there is a great car show in downtown. Just in case you want to go somewhere a little more out of the way, Livingston is a neat little town as well...Riding down in paradise valley is flat but stunning view of the mountains. Its also a fairly quick ride (by car) over to Grand Teton and yellowstone. Beautiful riding there too. There are several good bike stores and restaurants in down town Bozeman.
