Tartare de boeuf poêlé. A really good hamburger, very lightly cooked ("pshh, pshh"):



Marmite du pêcheur. Something between a soup and a stew, with shrimps, mussels and fish, served with cheese and aïoli:



And for dessert, of course, flan:
